      80 sounds way too low. I think all coffee should be brewed between 92-96 degC regardless of method. You are probably spot on with your brew-the-kettle-and-wait-a-couple-of-mins process.

      Not brewing above 96deg is another key to nailing that great cup. This is also the reason why stove-tops (while making strong coffee) can never make a sweet, complex brew due to brewing at 100deg plus. Be aware that once you drop below 90 the coffee will start to taste really sour.

        I love it to be honest. I always found I got heartburn from percolator or cafetiere coffee which put me off drinking it regularly, and everyone in work seems to drink coffee that smells burnt. The Aeropress is so quick and clean to use and it gives a lovely smooth brew. I'm no coffee specialist at all, it just makes nice coffee (IMO) easily.
        I just do the "couple of minutes off the boil" method. I was going to get a thermometer but in truth it tastes great to me without overthinking it so I've just carried on that way. I tend to get too involved with every new hobby and I actually don't want to with coffee.
