80 sounds way too low. I think all coffee should be brewed between 92-96 degC regardless of method. You are probably spot on with your brew-the-kettle-and-wait-a-couple-of-mins process.
Not brewing above 96deg is another key to nailing that great cup. This is also the reason why stove-tops (while making strong coffee) can never make a sweet, complex brew due to brewing at 100deg plus. I just do the "couple of minutes off the boil" method. I was going to get a thermometer but in truth it tastes great to me without overthinking it so I've just carried on that way. I tend to get too involved with every new hobby and I actually don't want to with coffee.
