        Love sherry, goes really well with a cigar. Some favourites are Fino La Ina, La Guita, Amontillado Del Principe 15 anos.

        Had the wine pairing below last night which had 3 amazing sherry's. No's 3, 4 and 5 on the list.

        The Ximenez Spinola is one of the best I've ever tried, so complex.

                  I quite like the east India, use it quite a bit in cocktails. If you think this is too sweet I'd stay away from PX.

                      Little.drop of W&H Alegria Manzanilla while watching the darts before dinner

                      Nose: crisp and aromatic, with lots of toasted almond, intense flor and a bit of hay. Dried yellow flowers. Gentle sea spray. Bread crust (migas actually). Subtle Mediterranean herbs as well. I really like its warmth and individual character.

                      Mouth: a full-bodied but smooth Manzanilla with an above-average structure and a great attack. Some olive brine, toasted almonds and walnuts. Also a hint of sweetness. Subtle fennel too. As on the nose, it shows a few older elements that are hinting towards a Pasada style

                        Tonight's drop


                        Amontillado Los Arcos
                        Aged for equal periods under “flor” and in contact with the oxygen, in Bodega Emperatriz Eugenia in Jerez de la Frontera. This dry Amontillado acquires a genuine, rich and nutty flavour through years of ageing. Amber in colour, with hazelnut aromas on the nose. Light, soft and round on the palate, with a long aftertaste.

                        There were two arches at the entrance to the winery at Plaza del Cubo, where this Amontillado was aged. Each one was dedicated to one of Emilio Lustau’s sons’ wives: Arco de Zuri (for Emilio Lustau Ruiz-Berdejo’s wife) and Trini (wife of José Luis Lustau Ruiz-Berdejo

                          Tonight's Sherry
                          Manzanilla Papirusa
                          Aged following a biological ageing, under a veil of yeast called “flor” in the cool, humid, salty air of Sanlúcar de Barrameda, a fishing town on the estuary of the Guadalquivir river. Bright yellow colour with golden reflections.

                          This Manzanilla is laced with sea breeze scents and pleasant chamomile and flor aromas. Bone dry and light, fresh and crisp, with a hint of sea salt on the palate. Delicate and refreshingly acid with a lingering aftertaste. Papirusa means “elegant and beautiful”. It was the name of the doll that Emilio Lustau gave the daughter of Joaquín Burgos, first manager of Bodegas Lustau in the ’40s.

                            Today's sherry

                            Complax and savoury cask fermented, single vineyard Fino Sherry.

                            The lowdown:
                            Made from grapes grown on Valdespino's own vineyard, Marchamudo Alto. The wine is fermented in barrel producing a fuller-bodied style and when bottled it's ten years which is much more than usual. It's very savoury on the palate with flavours of green apples, sea salt and toasty yeast.
