At a guess, frothed milk poured over espresso? I may be wrong but my guess is that due to the structure of the foam, a whisking technique was used rather than a Steam Wand. However it may just be the Case that mrcigar is just a lot better at using a steam wand than I am and can achieve this level of dry foam with one.

not intending to teach anyone to suck eggs, and you probably do this already, but i find less milk and lots of patience and steam is good for building dry froth.
I do agree though, that looks incredibly good dense froth
@cigarmo, I'd say that was the way owing to the way the froth has been pushed up the sides of the glass... thats how it looks anyway
For anyone interested, garraways website can be good for cheap whole beans

Ok, this is how such a magnificent head is achieved - first you need one of these frothing pots - mine is made by Bialetti.

Step 1 - Make the coffee shots as normal. I use a stove top coffee pot as pictured. The coffee in the picture had 3 shots.
Step 2 - if you take sugar add it before the milk because the stirring will destroy the head.
Step 3 - Warm some full cream milk (blue top) in the milk frothing pot. I warm to 80-85 degrees. Any hotter effects the taste.
Step 4 - Froth the milk by plunging repeatedly and knock out the large bubbles by tapping the pot on the work top.
Step 5 - Pour the fabulously frothy milk over the coffee quickly to the top of the glass. The bubbles will rise, causing the coffee to settle, looking very much like a pint of good Guinness or similar. Once settled out a little, top up a little to cause the head to rise like a souffl?.
Step 6 - this the the most important bit: Bend down to admire the tumbling appearance of the coffee/bubbles and smile. Invite wife and children to admire your architecture. Post image on ukcigarforum.
Step 6 - Continue to smile whilst drinking it, admiring such a sense and creamy head.
I think the tall and narrow shape of the glass has a large part to play in achieving a satisfying head. A wide cup would result in a thinner head because, in reality, there are only so many bubbles, and the manner in which they are packed dictates the thickness.
These are the small and simple things in life that carry such potential to create good times.
