          My sharpener is one of these. If you want something relatively straightforward that gets your knives well beyond shaving sharp (seriously), then you won't go far wrong with this. I wouldn't attempt to use it for any serious reprofiling though.

                Global knives are great, although now that loads of famous chefs endorse them they have become almost twice as expensive as they were 10 years ago .

                I love the guy on the web-page, who I think is their QC-head or something similar; I once happened to see a knife sharpening demonstration he did at the Culinary Olympics in Germany a few years ago and it was one of the most amusing pieces of knife tricks I have ever seen. The guy is a real showman.

                          [EDIT] I won't argue with the Sebenza though. If you're looking at spending that kind of cash why not go custom? Shall we start a knives thread? Incidentally, I'd choose just about any blade shape other than tanto unless your intended use is stabbing oil drums. LOL, and don't even get me started on liner locks...

                          • God no, Spyderco standards dropped years ago.

                            There are some VERY good B?ker knives, but the good ones are from Germany and harder for TJ to source. The B?ker stuff in the US is mainly non-German made, and OK for BUDGET kit. Same goes for Gerber, OK for cheap stuff.
