A slightly better attempt at pouring a rosetta. Delicious creamy and chocolaty coffee. A cigar would've gone down a treat with it....

Ordered a couple of single origins as I haven't for a couple of years. Willing to give them another go since I use the V60.
Tried the Guatemalan coffee after lunch, it was very smooth but still lacks that strength I like. I have a feeling I won't be happy till I get the espresso machine

No worries. Happy to try and help if I can. Weighing the coffee and water poured in will help to achieve greater consistency and identify what changes can be made to adjust the flavours you're getting in the cup.
One of my go to brew recipes, if it's of any use, for both sweetness and complexity in the cup has recently been a 13g coffee:200g water brew with the v60.
Once set up I pour an initial 50g of water for the bloom and then pour the rest of the brew water in a slow steady stream right down the middle of the v60 from 45 sec to 1.30 with the brew finishing around 2-2.15. Requires quite a finer grind then what you'd normally use for a v60 brew.
