I think Ramsay must be doing something OK to maintain his 3 stars at Hospital Road but you are right ...how much time is he spending in the kitchen pushing things forward?
It is worth considering that Michelle Rue holds 3 stars at the Water-Side Inn with a very traditional menu that delivers high on excellence but low on culinary progress.
As for Ferran Adria it appears El Buli is no more and now never to re-open. A real shocker and a great loss to the culinary map.
Any Thomas Keller fans here ...he was pushing the envelope (in isolation) way back when.
