    Fillet would be medium but fatty rib eye I like well done.
    Amazing how many places deliver it the same whatever you ask for or sneer at well done.
    I like it caramelised on the outside and not bloody on the inside.

        I thought this was worthy of resurrecting the thread, a 1.2kg Porterhouse for tomorrow night, just over 2.5? thick.

        It?s in a 12.5? pan for scale. Dry aged for 28 days and will be served with a compound butter, creamed spinach and pan-fried potatoes.

          I've literally just stepped out of the gym. Intensive session. Not eaten since lunch. Finished the water bottle. Open up these pictures. I'm salivating all over the place.

          Yum.

          Cook from room temperature. Nice hot pan.

            That?s a cast iron skillet, will get a few mins at max temp on each side to get a nice crust going before it goes in the oven until it?s medium rare.

            It?s currently uncovered in the fridge having been rubbed with olive oil, pur?ed garlic, Malden salt and cracked black pepper.

            I?d just returned from the gym as well, it had the same effect 🤤
