Can't believe I missed this thread! Never get enough time on here. I love cheese and all this chat about it just makes me miss home more than ever. Got a lovely bit of Stilton sweating away in the fridge - the riper the better as far as I'm concerned. The bacon and Stilton sandwich sounds fantastic.
The officers' mess in one of the ships I served in years ago used to buy whole Stiltons. One would come out every meal time, spoon sticking out the top. Occasionally someone would buy the Stilton a glass of port, and when it got towards the end, the chefs would make the remains into Stilton soup. Happy days!Comment

Had a good friend of mine back in the Halls of Oxford who killed my obsession with Blue Cheeses full stop. I know the riper the better, but damn he nearly killed me twice with his blue cheeses. I swear to God that it must of had new forms of life on said Blue Stilton...Comment
