I use 2:1 Polenta to Strong white bread flour, and particularly like putting tinned sweetcorn in the mix. I will try jalapeno though that sounds great! The one I had last night had some cayenne powder in which gave it a Smokey/warming hint.

Saturdays effort
Forgot to post this at the time. It was the mrs ' s birthday last week so I made her beef wellington with goose fat roast potatoes and steamed tenderstem broccoli and green beans with a red wine reduction....
