        Proper day away from the office today
        So going for the tapas tonight for the family meal
        Do love tapas opened a bottle of Nuits St George 1966

        But it was knackered you can probably see by the amount of sediment in the bottle
        Anyway cracking on with the food already peeped the Tomato / Mozzarella salad
        With rocket and Coriander
        Chorizos in red wine is resting

        Gambas Pil Pil marinating in garlic & chilli
        Garlic mushrooms being prepared

        Still got loads to prep oh an going to be starting with a bottle of

        2012
        Followed now by the red Margaux Grand Cru Chateau Cantenac Brown 1988

        And for dessert a bottle of 1976 Trockenbeerenausles from Austria

            Alone with some stuffed vibe leaves and stuffed peppers
            And not to forget the olive bread , nachos pitta bread and dips

                          I saw a good interview with an American guy recently who said that the secret to good cornbread was cooking it in a cast iron dish with very hot pork fat or lard.

                              No problem, I've yet to try it myself but my Wife loves cornbread so I'll probably be giving it a go sooner rather than later.

                              Jalape?os are a nice addition, as is a 50/50 mix of fine/coarse cornmeal.

                                I have a cast iron corn bread pan that cooks them like heads of corn but I'm not sure about the pork fat.
